This chapter of Culinary Voyages brings the spirit of Provence into focus through a refined progression of rosé, flavour and atmosphere. Intimate in scale and effortless in tone, it unfolds as a moment to be savored slowly.
The Experience
The evening opens with a rosé masterclass in the Executive Lounge, where the wines of Minuty set the tone with their unmistakable freshness and quiet luminosity. Rooted in the Saint-Tropez peninsula, the estate expresses a distinctly Provençal art de vivre, pale in hue, precise in structure, and shaped by sun, sea air and effortless refinement.
The experience then moves to Fourni, where guest chef Gikas Xenakis brings his quietly distinctive culinary language to the table. Best known for his work as Head Chef of Aleria in Athens, Xenakis draws deeply from the Greek countryside, seasonality and the integrity of ingredients, translating them into a cuisine that feels both rooted and highly refined. His style is expressive without excess, thoughtful, tactile, and shaped by a deep respect for Greek produce and contemporary interpretation.
Alongside his menu, Minuty reveals its more textural side, delicate citrus, white-fleshed fruit and a lifted, saline finish that feels instinctively at home by the water. The pairing unfolds in quiet alignment, where freshness, ease and precision define the experience.
The evening is further enriched by our guest, Stathis Saltas, a WSET Diploma holder and seasoned wine professional whose work spans education, curation and communication within the Greek wine scene. With a perspective shaped by both technical expertise and a deep understanding of contemporary wine culture, he brings a refined, insightful dimension to the experience.
The Setting
There is a softness to its rhythm — from the first pour to the final course — where Provence is not referenced literally, but felt in tone, colour and pace. The atmosphere remains refined, sun-washed and quietly celebratory.
