Across two evenings at Ella Elissa, chefs Alex Tsiotinis and Thanos Stasinos present seasonal Mediterranean expressions, paired with exceptional wines from The Cellar.

The Experience 

The experience unfolds, enriched by our honored guest of Federico Moccia, one of the most respected voices in contemporary wine culture. As Director of Wine at 67 Pall Mall, the historic private members’ club in London, renowned for its exceptional wine program, he brings a rare depth of knowledge shaped by both precision and intuition, guiding with a refined, global perspective. 

Each evening unfolds as a singular expression, complete, yet part of a larger seasonal rhythm. 

At Fourni, Chef Alex Tsiotinis presents a cuisine defined by clarity, where Mediterranean ingredients are distilled to their essence and flavour emerges with precision and ease. Alongside, the Champagnes of Veuve Clicquot reveal their luminous character; fine, persistent effervescence, with notes of citrus and orchard fruit, and a structure that carries both freshness and quiet depth. Under Federico Moccia’s guidance, the pairing becomes an exploration of balance, where Champagne elevates without overpowering, and each course finds its natural rhythm. 

At Masari, Chef Thanos Stasinos introduces a more expressive and layered composition. Japanese technique meets South American influence in a menu that is vibrant, textural and quietly bold. Here, Veuve Clicquot evolves in tone, revealing greater roundness, energy and length, bringing lift to intensity and structure to contrast. The experience deepens into something more immersive, were flavour and Champagne move in quiet alignment.

Its signature style — radiant, structured and unmistakably refined — reflects a balance of freshness and depth, where each cuvée carries both precision and enduring character.
