In Greece, he has led distinguished restaurants such as Pacific Monte Carlo in Kifisia and the celebrated Nikkei restaurants in Kolonaki, Athens, and Mykonos. His love for Nikkei cuisine led him to Peru, where he undertook a deep dive into the country’s unique flavours, profoundly influencing his cooking style. Chef Stasinos’s culinary philosophy emphasises simplicity and high-quality ingredients treated with respect and minimal intervention.
