A pioneer of contemporary Greek gastronomy, Apostolos Trastelis is the founder of the two-Michelin-starred Spondi and the driving force behind acclaimed restaurants including Hytra, Galazia Hytra and Fuga. His collaboration with Ella Resorts sees him creating and overseeing the menus at Tsouka and Matsi.
